Tuscan Salmon in creamy sauce
This was a great discovery! While trying to bring a bit more greens to what the kids eat, we found a great recipe to use a little spinach in a creamy sauce for salmon. This was excellent! The kids loved it and we finally got some traction with at least one vegetable!
Really easy, quick, and with a lot of flavour in under 20 min.
Ingredients (for 2)
1 salmon (approx 250 grms)
fresh spinach
2 small onions
2 garlic cloves
salted butter
2 Tsp of crème fraîche
some parmesan cheese
white wine
Preparation
1- Put the salmon (skin first) into a pre-heated frying pan with a Tsp of oil and cook until golden on all sides (about 5-7 min). Cut the onions and garlic cloves into small cubes. Once ready, take the salmon out of the pan and place it on a plate.
2- Lower the heat to medium, and add a spoonful of salted butter to the pan to take on the salmon juices. Add the onion and garlic and cook until golden. Add a little white wine and let reduce. Lower the heat to low, add the crème fraîche, and parmesan, and let simmer. Add salt and pepper to your preference.
3- Add some leaves of spinach into the cream and add the salmon back for a couple of minutes…. and it’s done!
Serve with dry white wine and accompanied with steamed rice and a green salad.
