Quiche w/ smoked salmon & goat cheese
This is a delicious French classic with a little twist …
Quiche is a simple and delicious French classic dish that we normally have as a snack with friends. It is easy to cook and easy to eat… it can be eaten cold or hot ...and especially the kids love it! In our case, we tried to do it as a main dish with some salad to have a fresh plate during the summer.
The original version is known as “Quiche Lorraine” and uses bacon bits, but to reduce a bit the fat intake, we decided to give it a nordic twist and go with smoked salmon and goat cheese. It is now one of our favorites.
Luckily, one of our kids loves salmon, but the smaller one is not really fond of it. So by including salmon as part of the quiche, both enjoy it and get all the best of it.
So here it goes:
Quiche with Smoked Salmon and goat cheese
Ingredients
200 ml double cream
2 table spoons Creme Fraiche
3 eggs
3 slices smoked salmon
Goat cheese or Chavroux
1 roll of ready-made pastry
Place the pastry into a buttered baking tin mold, making sure that it is well placed and that there are no bubbles underneath it. Prick the pastry with a fork and but but the mold in the refrigerator for about 20 min. This will avoid it shrinking in the oven.
In parallel mix in a bowl the 3 eggs, the double cream the Creme Fraiche and 2 tea spoons of Chavroux.
Cut the smoked salmon in small strips and place them at the bottom of the mold and then pour the mix slowly.
As a topping it is great to add spring onion or a couple slices of goat cheese.
Put in the oven at a temperature of 200ºC for about 45 min, until the surface is golden. Turn off the oven and let the quiche rest for a few minutes.
