Oven-Roasted Vegetables

Now….how do you get children to eat lots of healthy veggies without so much hassle?

Well, we found 1 way…. it is not that difficult… it is delicious and quite healthy 🤩

Actually we do root vegetables in the oven with a bit of thyme as a side-dish for several meals. It is literally like doing French fries (“pommes” in German) but without so much fat and keeping the crispy touch. We can also use cucumbers and kohlrabi … but our kids have a thing against green-coloured food … no comment… that’s for another post…

Anyway, here is the trick:

1- Clean and peel some potatoes, sweet potatoes and carrots.

2- Slice them more or less to the same thickness of approx 1 cm

3- Place all the vegetables in an oven pan over baking paper

4- Add a little bit of olive oil (2 spoons max), some thyme and salt (fleur de sel if you have)

5- Then with your hands make sure than the oil, salt and thyme are well distributed and covering most of the vegetables.

6- Put in the oven for 40min @ 180˚C. (keep in mind, if you cut the vegetables thinner, then you will need less time in the oven) Just keep an eye that the corners do not get too dark.

 

And that’s it! a great healthy side-dish that the kids will love and that can go with a lot of main dishes. We use them frequently to accompany mini-burgers, a good steak, chicken escalopes or even some fish.
